- Baking soda: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Unsalted butter, softened: 1/2 cup
- Brown sugar, packed: 3/4 cup
- Apple cider: 1/2 cup
Instructions
- Step 1: Preheat oven to 375°F (190°C). In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Step 2: In a large bowl, cream together the softened butter and brown sugar until light and fluffy. Gradually beat in the apple cider until well combined.
- Step 3: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Step 4: Drop by rounded tablespoons onto ungreased baking sheets.
- Step 5: Bake for 8-10 minutes, or until edges are lightly golden brown.
- Step 6: Let cookies cool on baking sheets for a few minutes before transferring to a wire rack to cool completely. Drizzle with brown sugar glaze (recipe not included, but can be made with powdered sugar and brown sugar).
Notes
- Store cooled cookies in an airtight container at room temperature to maintain their soft texture.
- To gently warm the cookies, microwave them for about 5-10 seconds for a melt-in-your-mouth experience.
- These cookies pair perfectly with a warm mug of spiced apple cider or a scoop of vanilla ice cream.
- For extra flavorful cookies, try browning the butter before creaming it with the brown sugar.
