- 1 lb large prawns, peeled and deveined
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 red chilli, finely chopped (remove seeds for less heat)
- 1 lemon, zested and juiced
- 2 tbsp BBQ sauce (your favourite)
- 1 tbsp fresh parsley, chopped
- 1 tsp smoked paprika
Instructions
- Step 1: In a medium bowl, combine the olive oil, minced garlic, chopped chilli, lemon zest, lemon juice, BBQ sauce, and smoked paprika. Mix well to create a marinade.
- Step 2: Add the peeled and deveined prawns to the marinade, ensuring they are thoroughly coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavour.
- Step 3: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.
- Step 4: Remove the prawns from the marinade and discard the marinade. Grill the prawns for 2-3 minutes per side, or until they are pink and cooked through. Avoid overcooking, as this will make them tough.
- Step 5: Once cooked, remove the prawns from the grill and sprinkle with fresh parsley.

Notes
- Store leftover prawns in an airtight container in the refrigerator for up to 2 days.
- Reheat gently in a pan with a little olive oil, avoiding overcooking, to retain their juicy texture.

- For extra smoky flavour, add a pinch of liquid smoke to the marinade before adding the prawns.
