Ingredients
- All-purpose flour: 1 1/2 cups
- Cold unsalted butter: 1/2 cup (1 stick), cut into cubes
- Granulated sugar: 1/4 cup
- Pistachios: 1/2 cup, shelled and roughly chopped
- Blackberry jam: 1 cup
- Eggs: 2 large
- Almond extract: 1/2 teaspoon
- Powdered sugar: for dusting (optional)
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- Step 2: In a food processor, combine flour, butter, and granulated sugar. Pulse until the mixture resembles coarse crumbs. Press the mixture evenly into the bottom of the prepared pan.
- Step 3: Bake the crust for 15-20 minutes, or until lightly golden. Let cool slightly.
- Step 4: Spread the blackberry jam evenly over the baked crust.
- Step 5: In a bowl, whisk together the eggs and almond extract. Pour the egg mixture over the blackberry jam. Sprinkle the chopped pistachios evenly over the top.
- Step 6: Bake for 25-30 minutes, or until the filling is set and lightly golden. Let cool completely before cutting into bars. Dust with powdered sugar before serving, if desired.
Notes
- Store cooled bars in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
- For a warm, gooey treat, microwave individual bars for 10-15 seconds before serving.
- A dollop of whipped cream or a scoop of vanilla ice cream beautifully complements the tartness of the blackberries.
- Don't overbake the crust; a slightly underbaked base will provide a softer, more delightful contrast to the set filling.
