- Heavy Cream: 2 cups
- Whole Milk: 1 cup
- Granulated Sugar: 3/4 cup
- Egg Yolks: 4 large
- Vanilla Extract: 1 teaspoon
- Almond Extract: 1/2 teaspoon
- Lemon Extract: 1/4 teaspoon
- Blue Food Coloring: Few drops
Instructions
- Step 1: In a medium saucepan, whisk together the heavy cream, whole milk, and sugar. Heat over medium heat, stirring occasionally, until the sugar is dissolved and the mixture is steaming but not boiling.
- Step 2: In a separate bowl, whisk together the egg yolks. Gradually whisk a small amount of the warm cream mixture into the egg yolks to temper them. This prevents the eggs from scrambling.
- Step 3: Pour the tempered egg yolk mixture back into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly with a spatula, until the mixture thickens slightly and coats the back of a spoon. Do not boil.
- Step 4: Remove the saucepan from the heat and stir in the vanilla extract, almond extract, and lemon extract.
- Step 5: Add a few drops of blue food coloring until you reach your desired shade of blue.
- Step 6: Pour the mixture through a fine-mesh sieve into a clean bowl to remove any lumps. Cover the bowl with plastic wrap, pressing it directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, until completely chilled.
- Step 7: Pour the chilled mixture into your ice cream maker and churn according to the manufacturer's instructions.
- Step 8: Transfer the churned ice cream to an airtight container and freeze for at least 2 hours to harden completely before serving.
Notes
- To prevent ice crystals, press plastic wrap directly onto the ice cream's surface before freezing and storing.
- If your ice cream is too hard to scoop, let it sit at room temperature for 5-10 minutes to soften slightly.
