Ingredients
- Radishes, trimmed and halved: 1 pound
- Butter, melted: 3 tablespoons
- Olive Oil: 1 tablespoon
- Garlic, minced: 2 cloves
- Fresh Thyme sprigs: 2
- Salt: 1/2 teaspoon
- Black Pepper: 1/4 teaspoon
- Fresh Parsley, chopped: 2 tablespoons
Instructions
- Step 1: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, toss the radishes with melted butter, olive oil, minced garlic, salt, and pepper.
- Step 3: Spread the radishes in a single layer on the prepared baking sheet. Tuck thyme sprigs amongst the radishes.
- Step 4: Roast in the preheated oven for 20-25 minutes, or until the radishes are tender and slightly browned, flipping halfway through.
- Step 5: Remove from the oven and discard thyme sprigs.
- Step 6: Sprinkle with fresh parsley before serving.
Notes
- Store leftover roasted radishes in an airtight container in the refrigerator for up to 3 days.
- To reheat, toss the radishes with a touch more melted butter and warm them in a skillet over medium heat until heated through, or briefly microwave.
- Buttery roasted radishes make a delightful side dish alongside roasted chicken or pork.
- For a richer flavor, brown the butter slightly before tossing with the radishes.
