- 6 cups Rice Krispies cereal
- 10 oz large marshmallows
- 4 tablespoons butter
- 1/4 cup maraschino cherry juice (from jar)
- 1/2 teaspoon almond extract
- 1 jar (10 oz) maraschino cherries, drained and patted dry
- 12 oz semi-sweet chocolate chips
- 1 tablespoon shortening
Instructions
- Step 1: In a large saucepan, melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
- Step 2: Stir in maraschino cherry juice and almond extract. Add Rice Krispies cereal and gently fold until well coated.
- Step 3: Gently fold in the drained and dried maraschino cherries.
- Step 4: Press mixture evenly into a greased 9×13 inch pan. Let cool completely.
- Step 5: In a double boiler or microwave, melt chocolate chips and shortening, stirring until smooth. Spread evenly over the cooled Rice Krispies treats.
- Step 6: Let the chocolate set completely before cutting into squares.
Notes
- Store these treats in an airtight container at room temperature to keep them soft and chewy.
- While reheating isn't recommended, briefly microwaving a square for 5-10 seconds will soften the chocolate slightly.
- Serve these treats chilled for a delightful contrast between the crisp cereal and the firm chocolate coating.
- Don't skip patting the cherries dry; excess moisture will make your treats soggy!
