- 1 lb beef sirloin, cut into 1-inch cubes
- 4 medium potatoes, peeled and cubed
- 4 tbsp butter
- 4 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp dried thyme
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Preheat oven to 400°F (200°C). Toss the cubed potatoes with 2 tablespoons of butter, salt, and pepper. Spread them in a single layer on a baking sheet.
- Step 2: In a large bowl, melt the remaining 2 tablespoons of butter. Add the minced garlic, thyme, and parsley. Toss the beef cubes in the garlic butter mixture until evenly coated.
- Step 3: Arrange the beef cubes on top of the potatoes on the baking sheet. Ensure the beef is not overcrowded.
- Step 4: Bake for 20-25 minutes, or until the potatoes are tender and the beef is cooked through to your desired doneness. Internal temperature of beef should reach at least 160°F (71°C) for safety.
- Step 5: Remove from oven and let rest for 5 minutes before serving.

- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat gently in a skillet over medium-low heat, or in the microwave, adding a splash of water or broth to prevent drying.
