Ingredients
- Carrots, peeled and cut into 1-inch pieces: 1 pound
- Olive oil: 2 tablespoons
- Garlic, minced: 3 cloves
- Parmesan cheese, grated: 1/4 cup
- Dried oregano: 1 teaspoon
- Salt: 1/2 teaspoon
- Black pepper: 1/4 teaspoon
- Fresh parsley, chopped: 2 tablespoons
Instructions
- Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.

- Step 4: Roast for 20 minutes. Then, remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the carrots.
- Step 5: Return the baking sheet to the oven and roast for another 5-10 minutes, or until the carrots are tender and the Parmesan cheese is melted and lightly golden brown.
- Step 6: Remove from the oven and sprinkle with fresh chopped parsley before serving.
Notes
- Store leftover roasted carrots in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the carrots in a skillet over medium heat with a drizzle of olive oil to re-crisp them.
- These garlic parmesan carrots make a delicious side dish alongside roasted chicken or a hearty vegetarian main course.
- For extra flavor, try adding a pinch of red pepper flakes along with the oregano for a subtle kick.
