Instructions
- Step 1: In a medium bowl, combine olive oil, lemon juice, garlic powder, paprika, salt, and pepper. Add the chicken cubes and toss to coat evenly. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
- Step 2: Preheat grill to medium-high heat.
- Step 3: Thread the marinated chicken cubes onto skewers.
- Step 4: Grill the chicken skewers for 4-5 minutes per side, or until cooked through and slightly charred.
- Step 5: While the chicken is grilling, prepare the creamy garlic sauce. In a small bowl, whisk together mayonnaise, minced garlic, and chopped parsley.
- Step 6: Remove the chicken skewers from the grill and let rest for a few minutes before serving. Serve immediately with the creamy garlic sauce for dipping.
