Ingredients
- Boneless, skinless chicken breasts: 1.5 lbs, cut into 1-inch cubes
- Olive oil: 1/4 cup
- Garlic: 4 cloves, minced
- Parmesan cheese: 1/2 cup, grated
- Italian seasoning: 2 teaspoons
- Salt: 1 teaspoon
- Black pepper: 1/2 teaspoon
- Lemon juice: 1 tablespoon
Instructions
- Step 1: In a large bowl, whisk together the olive oil, minced garlic, grated Parmesan cheese, Italian seasoning, salt, pepper, and lemon juice.
- Step 2: Add the cubed chicken to the bowl and toss to coat evenly with the marinade. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
- Step 3: Preheat your grill to medium heat. While the grill is heating, thread the marinated chicken onto skewers.
- Step 4: Grill the chicken skewers for 6-8 minutes per side, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
- Step 5: Remove the skewers from the grill and let them rest for a few minutes before serving. Serve immediately.
Notes
- Store leftover cooked chicken skewers in an airtight container in the refrigerator for up to 3 days.
- For best results, reheat the skewers gently in a skillet with a touch of olive oil to keep them moist.
- Serve these flavorful skewers with a side of grilled vegetables or a fresh salad for a complete meal.
- Don't overcrowd the skewers; leave a little space between the chicken pieces for even cooking and better browning on the grill.
