Ingredients
- Broccoli florets: 4 cups, finely chopped
- Chicken broth: 1 cup
- Shredded cheddar cheese: 1 cup, divided
- Plain Greek yogurt: 1/2 cup
- Egg: 1 large, lightly beaten
- Onion: 1/2 medium, finely chopped
- Garlic powder: 1/2 teaspoon
- Salt and pepper: to taste
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- Step 2: Steam the chopped broccoli florets until tender-crisp, about 5-7 minutes. You can also microwave them with a little water. Drain well.
- Step 3: In a large bowl, combine the steamed broccoli, chicken broth, 3/4 cup of cheddar cheese, Greek yogurt, egg, chopped onion, garlic powder, salt, and pepper. Mix well.
- Step 4: Pour the broccoli mixture into the prepared baking dish, spreading it evenly.
- Step 5: Sprinkle the remaining 1/4 cup of cheddar cheese over the top.
- Step 6: Bake for 25-30 minutes, or until golden brown and bubbly. Let cool slightly before serving.
