Ingredients
- Broccoli florets, finely chopped: 2 cups
- Almond flour: 1/2 cup
- Eggs: 2 large
- Cheddar cheese, shredded: 1/2 cup
- Parmesan cheese, grated: 1/4 cup
- Garlic powder: 1/2 teaspoon
- Onion powder: 1/2 teaspoon
- Salt and pepper: to taste
Instructions
- Step 1: In a large bowl, combine the finely chopped broccoli, almond flour, eggs, cheddar cheese, parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix well until all ingredients are evenly distributed.
- Step 2: Heat a non-stick skillet or griddle over medium heat. Add a tablespoon of oil or cooking spray to the pan.
- Step 3: Drop spoonfuls (about 2 tablespoons each) of the broccoli mixture onto the hot skillet, flattening them slightly with a spatula.
- Step 4: Cook for 3-4 minutes per side, or until the fritters are golden brown and cooked through.
- Step 5: Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Notes
- Store cooled fritters in an airtight container in the refrigerator for up to 3 days.
- Reheat leftover fritters in a dry skillet or air fryer to restore crispness.
- Serve these fritters with a dollop of sour cream or a sprinkle of fresh chives for extra flavor.
- Ensure the broccoli is finely chopped to help the fritters bind together properly and prevent them from falling apart during cooking.
