Ingredients
- Unsalted butter, melted: 1/2 cup (113g)
- Granulated sugar: 1 cup (200g)
- Light brown sugar, packed: 1/4 cup (50g)
- Large eggs: 2
- Vanilla extract: 1 teaspoon
- All-purpose flour: 1 cup (120g)
- Salt: 1/4 teaspoon
- Shelled pistachios, roughly chopped: 1 cup (100g)
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
- Step 2: In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
- Step 3: Whisk in the eggs one at a time, then stir in the vanilla extract.
- Step 4: Add the flour and salt to the wet ingredients and stir until just combined. Be careful not to overmix.
- Step 5: Fold in the chopped pistachios.
- Step 6: Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Let cool completely in the pan before lifting out using the parchment paper overhang and cutting into squares.
Notes
- Store cooled blondies in an airtight container at room temperature for up to 3 days, or freeze for longer storage.
- Warm individual blondie squares in the microwave for 10-15 seconds to enhance their gooey texture.
- Serve these pistachio blondies with a scoop of vanilla ice cream and a sprinkle of extra chopped pistachios for an extra-special treat.
- Don't overmix the batter once you add the flour; gently fold until just combined to ensure a tender blondie.
