Instructions

  1. Step 1: Finely chop the semi-sweet chocolate and set aside. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.
  2. Step 2: Pour the hot cream over the chopped chocolate and let it sit for 1 minute. Then, gently whisk until the chocolate is completely melted and the mixture is smooth and glossy. Stir in the softened butter until fully incorporated.
  3. Step 3: Stir in the pistachio extract (if using), sea salt, and half of the chopped pistachios. Pour the ganache into a shallow, heatproof dish and cover with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming.
