- 8 ounces semi-sweet chocolate, finely chopped
- 1/2 cup shelled pistachios, roughly chopped
- 1/4 cup unsalted butter, softened
- 1/4 teaspoon pistachio extract (optional)
- 1/4 cup powdered sugar
- 1/4 cup unsweetened cocoa powder (for dusting)
- Pinch of sea salt
Instructions
- Step 1: Finely chop the semi-sweet chocolate and set aside. In a small saucepan, heat the heavy cream over medium heat until it just begins to simmer. Remove from heat.
- Step 2: Pour the hot cream over the chopped chocolate and let it sit for 1 minute. Then, gently whisk until the chocolate is completely melted and the mixture is smooth and glossy. Stir in the softened butter until fully incorporated.
- Step 3: Stir in the pistachio extract (if using), sea salt, and half of the chopped pistachios. Pour the ganache into a shallow, heatproof dish and cover with plastic wrap, pressing it directly onto the surface of the ganache to prevent a skin from forming. Refrigerate for at least 4 hours, or preferably overnight, until firm.
- Step 4: Once firm, using a small spoon or melon baller, scoop out rounded portions of the ganache and roll them into balls.
- Step 5: In a shallow dish, combine the powdered sugar and cocoa powder. Roll each truffle in the cocoa powder mixture to coat. Gently press remaining chopped pistachios onto the coated truffles.
- Step 6: Place the finished truffles on a parchment-lined baking sheet and refrigerate for at least 30 minutes before serving to allow the coating to set.

- Store truffles in an airtight container in the refrigerator for up to a week, their delicate flavor will be best enjoyed fresh.
- For slightly softer truffles, let them sit at room temperature for 10-15 minutes before serving.
