- 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (10 oz) can diced tomatoes and green chilies (Rotel), undrained
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup butter
- 2 tbsp Texas Roadhouse Cactus Blossom seasoning (or substitute with a blend of chili powder, paprika, garlic powder, onion powder, cumin, and cayenne pepper to taste)
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions
- Step 1: Season chicken pieces generously with salt, pepper, and Cactus Blossom seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
- Step 2: Add chopped onion to the skillet and cook until softened, about 3-4 minutes. Add minced garlic and red bell pepper and cook for another 2-3 minutes, until slightly softened.
- Step 3: Stir in Rotel (undrained), chicken broth, and heavy cream. Bring to a simmer and cook for 5 minutes, allowing the sauce to slightly thicken.
- Step 4: Return the cooked chicken to the skillet. Reduce heat to low, stir in butter until melted and incorporated into the sauce. Simmer for another 2-3 minutes, allowing flavors to meld.
- Step 5: Taste and adjust seasoning with salt and pepper as needed.
- Step 6: Garnish with fresh cilantro and serve immediately. Enjoy with your favorite sides like mashed potatoes or rice.
