- 1/4 cup strong brewed coffee, cooled
Instructions
- Step 1: Preheat oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press mixture firmly into the bottom of a 9-inch springform pan.
- Step 2: In a large bowl, beat cream cheese and remaining 1 1/2 cups sugar until smooth and creamy. Beat in eggs one at a time, then stir in heavy cream and cooled coffee.
- Step 3: Pour cream cheese mixture over the crust.
- Step 4: Bake for 55-65 minutes, or until the edges are set and the center is just slightly jiggly.
- Step 5: Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for 1 hour.
- Step 6: Remove from oven and chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
